6 raspberries muddled

25ml sugar syrup (made with 2 parts sugar, 1 part boiling water)

25ml Lemon juice

50ml Hedgerow Gin with Rhubarb and Raspberry

1 egg white

Muddle the raspberries in a cocktail shaker (or jam jar).
Add all other ingredients and shake with ice.
Strain it from the ice and shake again without ice before straining again into a coupe glass or martini glass.
Garnish with a freshly picked clover!
